It was lemony and firm. So good. My recipe to use it: I Sauted thin sliced fresh lemon slices in the oil till soft and added the lemon from the can and a touch of honey.. I toasted some sourdough, added a lemon cream cheese( grated lemon rind and mixed in with the cream cheese) , smeared it on the toast, added the lemon honey slices and placed the tuna on top. I used a lemon infused oil drizzled on top, a small grind of black pepper , and scattered fine chopped parsely sprinkled on top.
